James and I have had one heck of a month! I had a family emergency and had to rush home to Texas, and then we had all the Christmas hullabaloo to worry about. So, here I am apologizing again for my absence!
With this month being so busy, we find it so necessary to take time to spend some quality time together. James has recently started AdvoCare, more specifically their 24 day challenge cleanse. He also joined CrossFit so with him doing all that, it's made me realize I need to step up my game and start cooking healthier! We decided on a nice chicken recipe, our signature asparagus (that everyone loves), scalloped potatoes, and some pineapple. Spending time together is so important to us and while we may not be the best cooks, it's fun to be in the kitchen and learn together.
Our Asparagus Recipe:
Preheat oven to 375
Place your asparagus on tinfoil and drizzle the oil all over. Don't go overboard, just make sure it all gets the oil on it. Sprinkle the cheese and garlic salt over it, be as generous or sparse as you would like! We then cover it in the tinfoil and get another sheet and wrap it up again. We cook it for about 20-30 minutes because we like them nice and soft. Just a tip from experience, cut the stem ends off because they are tougher and don't cook soft. And that is it! Everyone loves these and they are just so simple to make it's almost criminal! haha.
I encourage you all, if you don't already, to make more room for family time! It's hard to get caught up with life and get busy, but when you slow down and spend genuine time together; that is when you really value your family members!
